Easy Mexican Crema

Nothing is more delicious on a fish taco than mexican crema. And it’s so easy to make at home using Mr. Kac’s Crack Lemon.

Add 1/4 teaspoon of Mr. Kac’s Crack Lemon to 1 cup of sour cream.

Next add the grated rind of one lime.

Then add the juice of the whole lime and mix.

That’s it. Add to your taco bar and enjoy! It’s so tangy and delicious and takes a minute to make.

We had the good fortune to be gifted some delicious fresh-off-the-boat albacore tuna (aka Tombo Ahi in Hawaii). So we decided to do a Mr. Kac’s Sampler.

A little Mr. Kac’s Crack Special.

A little Mr. Kac’s Crack Lemon.

And a little Mr. Kac’s Crack Spicy.

Don’t forget to season both sides. No extra seasoning needed!

We grilled it at 450 degrees for 2 minutes a side.

We didn’t put any oil on the fish, but you can brush a drizzle of olive oil before adding Mr. Kac’s if you like to help prevent it from sticking to the grill.

Perfect Oven Chicken Breasts

To make Perfect Oven Chicken Breasts, start with bone-in chicken half breasts, which you can often find on sale, like we did at Vons for .87 cents a pound. Score!

Preheat oven to 425 degrees. Place chicken breasts in a glass baking pan. To read more about glass vs. metal baking pans, click here.

Season top and bottom with Mr. Kac’s Crack Special Seasoning.

Use a knife to separate chicken skin so you can sprinkle Mr. Kac’s Crack Special Seasoning under the skin. This will give you flavorful white chicken meat for tacos, sandwiches, salads, whatever.  The chicken skin  and ribs will help keep the meat moist while cooking.  

Cook at 425 degrees until the chicken reaches an internal temperature of 165 degrees. This 4-pack of chicken breasts weighed 5.15 pounds and took 55 minutes to cook perfectly.

Depending on the thickness of your chicken breasts, cooking times can vary. Check them with your thermometer after 25 minutes  and give them another 10 minutes for every 10 degrees off from 165.

If one chicken breast reaches the perfect temperature, pull it out and place it on a plate while the others cook. 

The secret to Perfect Oven Chicken Breasts (besides Mr. Kac’s Crack Special Seasoning) is to not overcook the chicken!

 

Best Burger Recipe

To make the best burger ever, begin with one pound ground beef.  We love to use ground sirloin because it’s lower fat and makes a delicious meaty burger, no binders necessary.

Press the meat into 3 one-half inch patties.

Sprinkle both sides with Mr. Kac’s Special seasoning.

Cook on hot grill (425 degrees if you have a thermometer to check it) about 3-4 minutes per side. If your burgers are thin, they’ll cook faster.

When burgers on done, throw on buns for a quick toast.  We topped our burgers with provolone cheese after they were removed from the grill, plus shredded lettuce, onion, and tomato. Condiments to your liking.
